Say “Hawaiian food” and most people will probably think of images of luaus they’ve seen on TV.

But there’s a lot more to the cuisine of these islands than a whole roasted pig with a pineapple in its mouth. There are a bevy of influences from the new world (Spam, more on that later), old world (Portuguese colonialists left a legacy an undying love of dried sausage) and the old, old world (Japan is a major player in Hawaiian cooking).
